The most basic dressing is vinaigrette, which is a combination of oil, vinegar, and seasoning. Its main goal is to enhance the flavor of whatever it “dresses,” in many cases, fresh fruits and vegetables. A vinaigrette’s ingredients are not transformed by cooking, so mixing small batches of fresh, well-made oils and premium vinegar just before using is essential to great flavor. Fresh oils taste better and deliver higher health benefit.

To make a vinaigrette, use one part balsamic to two to three parts oil.

Whisk Method: Pour one part balsamic into a small bowl. Whisking constantly, slowly drizzle in two to three parts EVOO or other quality seed or nut oil.

Shake Method: Pour one part balsamic and two to three parts oil into a jar, seal and shake vigorously until well combined. Season to taste with salt and pepper, a spice blend, or both. For a thicker vinaigrette, add a small amount of mustard.

Basic Vinaigrette (Shake Method)

Ingredients

¼ cup of F. Oliver’s Balsamic of your choice
½ – ¾ cups of F. Oliver’s Extra Virgin Olive Oil of your choice
Salt & pepper, to taste

Combine all ingredients in a container or jar with a tight-fitting lid. Shake well and enjoy. The dressing will separate over time, make sure to shake well before each use.
