At F. Oliver’s, we select our products for their exceptional quality and uniqueness. Whether it’s an Italian olive oil, an Australian olive oil, a red wine vinegar, or a dried pasta, you can be assured that each is utterly fresh, of the highest quality, and absolutely delicious.
Extra Virgin Olive Oils: Essentially a fruit juice, olive oil is healthiest and most flavorful immediately after extraction. However, relative to other juices, olive oil is extremely shelf stable and maintains these benefits for up to 18 months.
To maximize the quality of our oils, we import from around the world, following production cycles seasonally. Every six months, our oils arrive from the Northern Hemisphere (California, Italy, Spain, Greece, and Portugal, for example) or the Southern Hemisphere (Australia, Chile, Argentina, and South Africa). This rotation ensures the freshest (and healthiest!) olive oil is available to you, no matter the season.
While “extra virgin” is often viewed as the highest grade of olive oil, our single varietal extra virgin olive oils (EVOOs) are rated as “ultra premium.” This rating indicates that the oil exceeds the quality requirements as set by the International Olive Council (IOC), the EU, and the USDA. Ultra-premium olive oil is even fresher and healthier than extra virgin olive oil. The freshness of these oils magnifies their unique characteristics; like wine or coffee, they reflect the region of origin and the conditions under which the olives were grown.
Our flavor fused and infused oils are similarly special. Our fused oils are flavored by adding the citus to the olives at the time of the crush. The base for our infused olive oils is a fresh, ultra-premium, single varietal extra virgin olive oil and the infusions use 100% natural ingredients. These delightful oils make it easy to quickly produce a delicious and healthy meal and complements any dish or any cuisine.
Specialty Oils: In addition to our olive oils, we stock premium oils that are made from a variety of nuts and seeds. These oils are selected for their freshness, taste, and overall quality. Three of these local oils, F. Oliver’s Finger Lakes Fabulous Squash Seed Oil, Pure Pumpkin Seed Oil, and Organic Sunflower Seed Oil are produced right here in the Finger Lakes region. These oils celebrate the bounty and culinary richness of our area and, along with the other specialty oils, extend the culinary possibilities for any cook.
Balsamic Vinegars: All of our balsamic vinegars are imported from Modena, Italy. While these vinegars differ widely in taste, color, richness, and flavor, they are all vinegars of the highest quality. Our series of dark balsamic vinegars are smooth and rich, complimenting vegetables, red meats, cheeses, soups or stews, and are great drizzled on desserts. Our series of light balsamic vinegars offers a more crisp flavor: perfect for salads, seafood, or cocktails!
Specialty Vinegars: Currently we offer a wonderfully acidic red wine vinegar made from Pinot Noir grapes, a crisp white vinegar from Champagne, and a rich sherry vinegar. A nice contrast to the sweet balsamic vinegars, these vinegars will awaken the senses and brighten all sorts of food and flavors.
Our Spices and Spice Blends
Our spices and spice blends add flavor and nuance to your dishes. From a Morracan Ras el Hanou to a Chinese Five Spice, we carry many interesting and difficult to find spices and spice blends.
Our spices and spice are sourced from one of the most reputable spice merchants in the world and one of the oldest in America. They source their spices from their country of origin and grind them fresh just hours before they ship them to us. We bottle them immediately and get them into the stores. Since supermarket spices can take 12 to 18 months just to get onto the shelf, their life on your shelf is decreased significantly.
Many of our spice blends are salt-free, making them perfect for those who are watching their sodium intake.
Other Exceptional Ingredients
Mustards: F. Oliver’s ultra-premium mustards are made in partnership with Mustard Seed ‘N’ More, a Farmington, NY company founded by Maggie Brewer. When Maggie decided to retire and sell the company, it was purchased by then F. Oliver’s Canandaigua store manager Emma Coggi and her husband Patrick. Emma had worked closely with Maggie developing the mustards she made for F. Oliver’s and she and Patrick fell in love with the business. All the mustards are handcrafted in small batches in Patrick and Emma’s commercial kitchen in Farmington.
Pasta: Pasta stocked at F. Oliver’s in Rochester and Canandaigua, comes directly from Flour City Pasta. Stationed in Macedon, NY, this family-owned business produces handmade artisan pasta using high-quality durum wheat and locally-sourced vegetables, fruits, herbs, and spices. We stock a variety of Flour City’s cuts and flavors–there is always something to pair with our oils, vinegars, and spices.
F. Oliver’s Finger Lakes Flake Salt and Seneca Lake Salts: These culinary flake salts are another product direct from our region. The salts are extracted from beneath Seneca Lake using a brining and evaporation method. These methods produce a wonderfully clean and pure tasting salt, delightful for cooking, baking, and finishing. In addition to F. Oliver’s Finger Lakes Flake Salt, we carry three Seneca Lake Salts infusions: Lemon, Rosemary, Garlic, and Grapevine Smoked.

Our favorite way to use the Tuscan Garden olive oil is to roast vegetables and Chicken. Our other favorite is to make a stir fry with the Smoky Chipotle!
