Springtime Mushroom & Snow Pea Salad

Directions

  • Blanche snow peas in boiling water, until tender-crisp.
  • Refresh in ice water and pat dry.
  • Roughly chop or slice mushrooms.
  • Whisk a vinaigrette of EVOO, Balsamic Vinegar and mustard.
  • Toss with mushrooms, snow peas and scallions.
  • Season to taste.
  • Chill well.
